Paprika is the ground bright red powder from sweet and hot dried peppers with flavour that is milder than cayenne pepper with a characteristic sweetness. Essential spice in Hungarian Goulash and in the gravy Paprikosh, made with meat sauce and sour cream. Hungarian Paprika is used in the preparation of sausages and deli meats and as a garnish on potato salads and devilled eggs. It is found in spice rubs and barbecue sauces for meats such as spareribs or pork butt. It is also excellent in compound butters for lobster or shrimp.
